Vanilla Pumpkin Soup




1 pumpkin.

2 onions.

1 leek.

15 g of butter.

1 chicken stock cube.

1 lt of water.

50 ml of sour cream.

100 ml of milk.

1 teaspoon of CIELITO LINDO Vanilla extract.

Salt and pepper.



Cut the pumpkin in cubes, slice the onions and leek. Combine the vegetables, chicken stock cube, water, salt and pepper in a soup pot. Bring to a boil, reduce the heat and simmer for 45 minutes until vegetables are tender. Meanwhile, bring milk to a boil and add the Vanilla extract, let infuse for 20 minutes.

Blend the vegetables in a food processor. Return to pot and warm over low heat. Add butter, cream and Vanilla infused milk. Season with salt and pepper if needed.
